In this video, we are preparing a traditional Colombian dish called Bandeja Paisa, which is one of the most representative meals in Colombia because of its variety of ingredients and flavors. At the beginning of the process, we start by organizing all the ingredients and preparing the kitchen area before cooking. First, we wash and cut vegetables such as onions and green onions, which will later be used to prepare the hogao, a traditional Colombian sauce that gives a lot of flavor to the dish. While one person cuts the vegetables, another person prepares the pots, pans, and utensils that will be used during the recipe. This helps make the cooking process more organized and efficient.
After preparing the vegetables, we begin cooking the beans in a pressure cooker because they require a longer cooking time than the other ingredients. The beans are one of the most important parts of the Bandeja Paisa, so they need to cook slowly and correctly in order to become soft and absorb all the flavors. While the beans are cooking, we start preparing the hogao by mixing onions, tomatoes, garlic, and seasoning in a pan. The ingredients are stirred carefully so they cook evenly and do not burn. During this part of the video, we can already see how teamwork is important because everyone is helping with a different task at the same time.
As the process continues, the kitchen becomes more active and the smell of the food begins spreading everywhere. While the sauce cooks, we continue checking the beans and preparing the next ingredients. At one moment in the video, lemon is squeezed and added to some ingredients to improve the flavor and give a fresher taste to the preparation. This part of the process is very important because it creates the base flavors for the Bandeja Paisa and prepares everything for the next steps. Little by little, all the ingredients begin coming together, and the preparation starts looking more complete. By the end of this section, the beans are still cooking, the hogao is almost ready, and the kitchen is fully prepared for cooking the meat and the rest of the ingredients.
